A Simple Partridge Recipe

As we are not into the depths of winter just yet and the seasons only just beginning, let's start of with something light...

Zoe Horne, formerly of the Good Housekeeping Magazine cookery team and now a freelance writer for various industry magazines, has provided us with this fantastic simple partridge recipe, a great alternative to roasting.

Grilled Partridge


A simple dish to prepare – yet delicious!

Hands-on time - 10min. Cooking time - about 15min. Serves 4
  • 4 young partridges
  • 3tbsp olive oil
  • 1/2tsp each ground coriander and ground cumin
  • small handful freshly chopped parsley
  • a squeeze of lemon
1 Preheat the grill to a medium heat. Split the partridge open down the back, a large knife pressed firmly down will do the trick, and splay or spatchcock them (flatten).

2 Mix together the olive oil, coriander, cumin and some seasoning in a small bowl. Rub all over the bird.

3 Grill for about 10min, depending on the size, turning frequently, watching so as to not burn the bird.

4 Sprinkle over the parsley and drizzle the lemon on top. Serve with seasonal greens and new potatoes.
